The Girt by Sea Cabernet Merlot is a blend of Cabernet Sauvignon (68%), Merlot (30%) and a splash of Cabernet Franc (2%). The fruit was sourced from sustainably and organically grown estate fruit on the Weightmans and Ullingers blocks. The gravelly slopes provide the perfect soil and microclimates for growing these varieties and produce wines with an excellent natural balance that conveys a clear sense of place.
The fruit was destemmed but not crushed and fermented separately in a combination of open, static and concrete fermenters with twice-daily gentle hand plunging or pump-overs. Once pressed the wines matured in French oak for 12 months then were blended and filtered before bottling in April 2021.
