Fruit for the Yea Valley Chardonnay comes from the same well-established site as the Cabernet Franc, sitting on duplex clay just south of the Yea Valley. The site is renowned for consistently high-quality grapes, so when the opportunity came to secure some, the Hoddles team didn’t hesitate. The fruit was destemmed and lightly pressed to tank. After a few days, a portion of the juice was transferred to oak for fermentation on full solids. The wine then matured on lees for 11 months before bottling.
