Organic in conversion. This is a négoce sparkling born out of Chidaine’s low yields in 2018 and should not be confused with the Estate’s Brut Nature (offered below). It is crafted from Chenin grapes purchased from a young grower in Montlouis. The site is in organic transition and the fruit cropped from multiple parcels on sandy/clay topsoil with limestone (tuffeau) bedrock.
Following a pneumatic pressing, the juice was fermented with indigenous yeasts in large format barrels for up to six months. The wine was then aged for a further six months on its fine lees in tank and transferred to bottle to rest sur lattes for a minimum of 12 months. No malolactic fermentation, no chaptalization, no dosage.
