Although clearly most famous for its wines, Quinta do Noval is not a one-dimensional monoculture. Cheek-by-jowl with a menagerie of ducks, geese and pigs, it produces a wide range of organic produce including olives, oranges, figs, clementines and walnuts. Noval farms 25 hectares of ancient olive groves (most are more than 200 years old) devoted to Portuguese varieties including Cordovil, Madural, Verdeal and Galega. The trees are farmed traditionally with no irrigation, and pruning is done by hand. To extract the best quality Extra Virgin Olive Oil, all the fruit is cold-pressed.
