Domaine du Salvard quietly go about their business producing true, classic Cheverny that is both delicious and elegant. The Delaille brothers have focused their attention on growing fresh, lively Sauvignon Blanc, deeply rooted in the sand, clay, and limestone plains of north-eastern Touraine. Gilbert and his sons have also made their own contributions to the heritage of the Domaine, including the introduction of sustainable farming practices into the vineyards, as well as temperature-controlled vinification equipment to the winery. Having worked with the Unique Sauvignon for a handful of years now, we have turned our attention to Salvard's terrific value AOC Cheverny wines. L'Heritiere is Salvards funky old-vine/low yield bottling. As with the regular Cherveny it's roughly 85% Sauvignon Blanc and 15% Chardonnay, all hand harvested, from the Estate's oldest, limestone rooted vines. Both varieties are barrel fermented separately before blending and it is bottled unfiltered. A captivating, exotic white Loire.
