Sweet. The warm dry weather experienced during the 2018 vintage provided Steve James & Co. perfect conditions for crafting a cane-cut Semillon. The fruit was selected from two vineyard blocks—the Estate Block 6, planted in 1978, and Cordis Block 6, planted in 1994. The cordons were cut in early March once the desired flavour profile was reached, then the fruit was hand-harvested on 23 March with intensely concentrated flavours in the citrus fruit spectrum.
Fermented mostly in stainless steel, the wine displays lifted aromatics of citrus with hints of honeycomb and talc, whilst the palate is pristine and fresh with flavours of citrus marmalade and golden pear. A hint of French oak adds complexity and spice, with the lovely balance of sweetness and acidity ensuring the wine will complement a wide assortment of desserts.
