This year’s wine, from the oldest block on the property, is a blend of Cabernet Sauvignon (97%) and Petit Verdot (3%). The vines are planted on a fractured laterite/ironstone ridge that pops up in the middle of the property with a north-south incline, allowing for excellent drainage. The fruit is handpicked, sorted, crushed and destemmed before fermentation in small open-top fermenters. The ferments are plunged by hand and macerate for an extended period before being basket pressed to old French barriques for 18 months. This smooth, stylish wine displays all the hallmarks of a classic Margaret River Cabernet.
