This comes from two sandy parcels in the vineyards of S.S. Trinità (Canale) and San Michele (Santo Stefano Roero). The vines grow at around 280m and have an average age of 20 years. The fruit was handpicked and divided into two parcels. Half was pressed as whole bunches and fermented with indigenous yeasts, while the other 50% spent three days on skins for a little extra grip and to capture the flavour from the external landscape. Aging was half in stainless steel and half in large, untoasted Slavonian oak barrels. It was sent to bottle with no filtering or fining.
