Salharang’s Moelleux is crafted entirely from Petit Manseng. The drying southerly foehn wind allows for the late harvests and passerillé necessary to produce Jurançon’s moelleux wines. The 2021 Phoenix was picked in November, then naturally fermented and aged for eight months in used barrels.
