Previously labelled Prélude and now named after the winegrowers’ youngest, Elisa, this is the first Pouilly in the range and cropped from the domaine’s younger vines. Even at this level, shrewd yields and precise farming elevate this above the norm. From a selection of lieux-dits, the vineyards cover the gamut of Pouilly’s soil types (including, limestone, silica and flint).
The grapes were primarily whole-bunch pressed with some crushing for structure and aging took place in stainless steel tanks on the lees, for eight to twelve months. From a cool year that Pabiot describes as “very classical”, the 2021 is fizzing with energy; a bundle of citrus oil, stone fruit and white flowers bonded to chalky freshness, tension and a sappy, stony finish. Near faultless in its class.
