Domaine du Salvard has been a standard-bearer here ever since Maurice Delaille bought this property in 1900, replanting the vineyards and renovating the estate. Grown on mature vines rooted in the sandy clay soils of Cheverny’s Fougères-sur-Bièvre, the ‘Butterfly’ label is 100% Sauvignon Blanc raised on lees without any oak. From a wonderful Loire vintage, it’s a pithy, succulent, focused Sauvignon with white pepper, citrus fruit, and fresh herb flavours. Then, there’s a glide of mouth-watering acidity and a fine, chalky finish. Proper, pourable Loire Sauvignon, done right.
