Toolangi’s F Block—home to 18-year-old vines of the Gin Gin clone—is the highest parcel of vines on the property and has been identified as growing some of the best Chardonnay that this Dixon’s Creek vineyard produces. In 2019 the fruit was crushed and pressed straight to barrel (35% new) with full solids. Primary fermentation was powered by wild yeasts, there was no malo this year, and the lees were stirred for the first six months of maturation. The wine then spent 10 months aging on lees before bottling.

“Brisk, chalky and vigorous wine featuring a little cap gun smokiness, lemon rind, white peach, oatmeal and cinnamon. It’s bright and tight, lovely flinty grip and zesty lime rind tang, cool ‘mineral’ acidity, pink grapefruit and grilled nuts, green pear, and a long tangy and smoke tinged finish. Flinty flinty, and fresh. All about texture and a rip cord of acidity. Kind of imperious, over friendly, and water-coloured too, though that’s no bad thing.”
