AT-A-GLANCE • Champagne grower based in Congy in the Coteaux du Morin, where the Collin family traces its vine-growing roots back to 1812. • Olivier Collin has run it since the early 2000s when he extricated his family's 8.7 hectares from négociant contracts. • One of Champagne’s most driven and inquisitive vignerons, Olivier was a stagiaire at Selosse in 2001, and Anselme continues to be an inspiring mentor. • Roughly half of Collin’s vines lie within the Chardonnay-dominant, chalky northern sector of the Coteaux du Morin—effectively the southern continuation of the Côte des Blancs. • Collin's Blanc de Noirs and Rosé de Saignée grow on Les Maillons in the Côte de Sézanne, a two-hour tractor ride south, where deep clay and continental influence are ideal for Pinot Noir. • Collin's blueprint includes high levels of reserve wines, extended lees aging, an increasing percentage of foudre-aged wine and state-of-the-art, ultra-gentle Coquard PAI press. • No added yeasts, fining or filtration are the go, and dosage is around 1-3 g/L. • These exclusively single-vineyard expressions are extremely rare and sought-after; they are sold on allocation.
